About Us

– Aurora Pizza Ovens is a specialist in providing equipment and services for Pizzerias.
– We have developed a long-time experience and a specific know-how in the Pizza industry business.
– We produce professionals wood fired and gas fired pizza ovens built in natural lava stones.
– Aurora Pizza has also created and improved its own operating methodology for the set-up, start-up, production, and assistance for Pizzerias or restaurant that want include the pizza in their menu.
– The goal of Aurora Pizza format is provide a tailored service that allows the restaurant to be fully and immediately operative, within few weeks, with a high standard quality product.

The Ovens Aurora 90

Equipment features:
– Professional Lava Stones Pizza Oven model “Aurora 90 ”
– The internal oven dome is built in natural lava stones. All the materials used do not contain asbestos.

– The oven is prefabricated in the factory and will be delivered already assembled and ready to use.
It is customer responsibilities put the oven in place and connect the electricity and gas (LPG) supply.
– The oven and the burners are built in compliance with U.E. gas-using safety standards.
– The oven is equipped with gas leak sensor (LPG) and carbon monoxide sensor.
– High Energy Efficiency (average difference between the inside oven temperature and the outside oven temperature more than 85%).
– Internal dimensions 90×80 cm.
– External dimensions 120×110 cm.
– Weight 550 kg (It can vary depending on the outside decoration choice).
– Optimal operating temperature from 350 to 500 Celsius degrees.
– Average cooking time pizza 120 seconds.
– Pizzas capacity: 4 large size, 5 regular size, 6 small size.
– The burners works in high ratio air/gas for maximize the efficiency and minimize the unburned residues.

Operating modes:
– Manual Mode
– Automatic mode, with digital temperature control.
– Combined mode (one burner in manual mode and one burner in automatic mode)
N.B: Before the oven installation the customer must provide:
– A standard low pressure gas (LPG) supply (30 millibar).
– An electrical power supply which complies with the Indonesian regulations (220v,Phase/Neutral/Ground)
– An easy access to the installation point, free of obstacles.

Special features:
In case of the oven will be installed in aggressive environment, such as at the front beach position,
some standard parts will be substitute with special parts as described below:
– All the metallic parts of the oven will be built in stainless steel AISI 304 and 316.
– The pedestal will be built in stainless steel AISI 304.
– The electric/electronic control panel will be waterproof.
– All the electric/electronic connections will be protected with lithium grease for prevent corrosion and electrical leakage.

The Ovens Aurora 120

Equipment features:
– Professional Lava Stones Pizza Oven model Aurora 120
– The internal oven dome is built in natural lava stones. All the materials used do not contain asbestos.
– The oven is prefabricated in the factory and will be assembled in the restaurant site in 2-3 working days (for don’t disturb the normal restaurant activity it is possible assemble the oven in 4-5 days, working in the night time).
– The oven component parts are designed to be able to pass through a standard 90 cm door.
– The oven can be disassembled and moved in a different position or different location in 4-5 working days.
– The oven and the burners are built in compliance with U.E. gas-using safety standards.
– The oven is equipped with gas leak sensor (LPG) and carbon monoxide sensor.
– High Energy Efficiency (average difference between the inside oven temperature and the outside oven temperature more than 85%).
– Internal diameter 120 cm.
– External diameter 180 cm.
– Approximate weight 3 ton.
– Optimal operating temperature from 350 to 500 Celsius degrees.

N.B: Before the oven installation the customer must provide:
– A gas supply of 500 millibar (0,5 Bar) pressure.
– An electrical power supply which complies with the Indonesian regulations (220v,Phase/Neutral/Ground)

Optional features:
In case of the oven will be installed in aggressive environment, such as at the front beach position, some standard parts could be substitute with special parts as described below:
– All the metallic parts of the oven will be built in stainless steel AISI 304 and 316.
– The pedestal will be built in stainless steel AISI 304.
– The electric/electronic control panel will be waterproof.
– All the electric/electronic connections will be protected with lithium grease for prevent corrosion and electrical leakage.

The oven + training

– This format will provide the oven as described above and the pizza makers training program as described below:
– Pre-opening phase: Pizza makers could be trained in a partner restaurant already operative.
– Start-up phase: A trainer will supervise the pizza makers until they will achieve the necessary skills.
– On demand: Anytime a new training section is needed (addition of new staff, new outlet opening, improving of production standards, etc).

The oven + training + the daily supply of the pizza dough

N.B. This format is currently available only in Bali (areas served: Kuta, Legian, Krobokan, Canggu, Denpasar)

This format will provide:

– The supply of any specific equipment for cooking pizza (ovens and all its instrumental equipment).
– The daily supply of high quality pizza dough as described below.
– Free maintenance and repair of the equipment supplied, including spare parts, for the whole period of using our service.
– Initial training of pizza makers.
– During the whole period of using our service we will provide a constant training, upgrade courses and monitoring of the standard quality and producing process.
– Auxiliary services.

Dough features:

Ingredients and the procedure are specifically tailored to obtain a traditional Italian pizza baked in high powerful ovens
– The dough is made:
In accordance with the traditional Italian method.
In accordance with Italian TSG certification.
In accordance with the specification of the Italian double processing method (36/48 hours).
– Mix of flour high in protein / gluten (> 16%, W350, Ash <1%, w/a 70%)
– Hydration 60%
– Low permeability
– In order to obtain the correct gluten mash the dough is processed in slow mixers, specific for pizza (planetary mixers or pastry mixers are not suitable)
– It is used homemade Natural Yeast (Sourdough)
– Long rising, in temperature controlled proofer (36/48 hours)
– Average cooking time: 90 seconds
– Using time: within 24 hours from delivery.

Standard portioning: 250 g for large size pizza (33 cm) and 130g for small size pizza (26 cm). Portioning can be varied according to customer preferences.

N.B. The cost of our service will be in relation to the number of pizzas actually sold , not in relation to the dough supplied. The dough not sold will be withdrawn the day after.
